This simple hummus recipe is a great alternative to using chickpeas (garbanzo beans) and the color is lovely too!
The recipe is adapted from Choosing Chia and was a big hit at the 2017 Menu for Change potluck party, making it into that year’s recipe book.
Ingredients:
- 1 1/2 cups shelled edamame
- 1/3 cup water
- 1/3 cup tahini
- 2 Tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
Directions:
- If you are using frozen edamame, boil in medium pot for 3-4 minutes, strain.
- In food processor add edamame, water, tahini, olive oil, and puree for 2 minutes.
- Next add lemon juice, garlic, cumin, salt, pepper, and puree again for 4-5 minutes.
- Adjust taste.
- Store in airtight container in fridge for up to 2 weeks.
