Main ingredients: chicken thighs, quartered small/medium potatoes, 1/4-inch sliced carrots, whole Roma tomatoes, anchovies and wedges from one lemon.
Seasonings: EVOO, salt, pepper, oregano, thyme, garlic clove, lemon zest, and red pepper flakes.
For this sheet pan version, it is important to bake everything at 400 F before the tomatoes are added – about 20-30 minutes – then reduce to 200 F for about 10 minutes once the tomatoes are scattered on top of everything.
As usual, cleanup is a breeze and tastes great for lunch the next day!
