I love turning leftover dinner into next day’s lunch. In fact, when I go out to eat at a restaurant I often take half of my dinner home to enjoy the next day. The same often goes for dinners at home—minus the to-go box.
Here’s another protein-packed lunch from Chez Glenn (my husband!), who also made dinner the night before.
Ingredients (you can decide what amounts you prefer):
Firm tofu, pressed
Broccoli crowns
Baby bok choy, sliced
Green onions, chopped
White onion, thinly sliced
Oyster sauce
Chili crisp
Extra Virgin Olive Oil
Japanese steamed rice
Poached egg
Method:
- Cut pressed tofu into large chunks, pat dry with paper towel.
- Sauté broccoli, bok choy, green onions and onion in skillet with small amount of oil, adding oyster sauce when almost done.
- Add in tofu and chili crisp (or can sauté in separate pan before adding), browning sides.
- Plate over bowl of steamed rice.
- For next day’s lunch, warm up tofu/veggie mixture in microwave, plate over rice, top with poached egg.
