Another favorite from the 2014 Menu for Change potluck party recipe book, created by Tracey Grant, RDN CWHC from Whole Daily Life. The sweetness comes from dates, honey and coconut. You can’t eat just one!
Base Ingredients:
- 1 C walnuts, unsalted
- 1/2 C cocoa powder
- 1/4 tsp salt
- 1.25 C pitted Medjool dates (about 12)
- 1/4 C almonds, unsalted
Mint Crème Ingredients:
- 3/4 C coconut oil
- 3/4 C coconut butter
- 2-4 Tbsp raw honey, to taste
- 10-20 drops peppermint essential oil (or 1/4-1/2 tsp mint extract)
- 1/2 C fresh mint leaves, with additional fresh mint for garnish
Directions:
To make the base, place walnuts and almonds in food processor or high speed blender and process until nuts are finely ground. Add the cocoa powder and salt, pulse to combine. Add dates, 2-3 at a time, until all are fully incorporated. Mixture should be crumbly, but will form easily into a ball.
Place mini muffin liners in mini muffin tin. Place a small amount (about 2 tsp) of mixture into each, press down to form a packed disc.
To make the mint crème, place the coconut oil, coconut butter, 2 Tbsp honey and 10 drops of peppermint oil in food processor and process until completely smooth. Adjust honey to taste. Add fresh mint leaves and pulse until leaves are roughly chopped. Taste and adjust peppermint oil as needed to taste, stirring in any additional oil that is needed.
Top each chocolate base with roughly 2 tsp of mint crème, and garnish with a fresh mint leaf. Place in fridge until firm.
