This super simple recipe is from the 2017 Menu for Change potluck party recipe book and I have yet to find a better “alternate” hummus recipe. It was submitted by Ashley Brown and adapted from the Choosing Chia website.
Ingredients:
- 1 1/2 C shelled edamame
- 1/3 C water
- 1/3 C tahini
- 2 Tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
Directions:
If you are using frozen edamame, boil in medium pot for 3-4 minutes, strain. In food processor add edamame, water, tahini, olive oil and puree for 2 minutes. Next add lemon juice, garlic, cumin, salt, pepper and puree again for 4-5 minutes. Adjust taste. Store in airtight container in fridge for up to 2 weeks.
