This delicious hummus recipe was first published on MenopauseMenu May 16, 2021. I have yet to find another that is as good—not that I’m searching! I really love the edamame flavor in place of traditional chickpeas.
This super simple recipe is from the 2017 Menu for Change potluck party recipe book, submitted by Ashley Brown and adapted from the Choosing Chia website.
Ingredients:
- 1 1/2 cups shelled edamame
- 1/3 cup water
- 1/3 cup tahini
- 2 Tablespoon olive oil
- Juice of 1 lemon
- 2 garlic cloves
- 1/2 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions:
If you are using frozen edamame, boil in medium pot for 3-4 minutes, strain. In food processor add edamame, water, tahini, olive oil and puree for 2 minutes. Next add lemon juice, garlic, cumin, salt, pepper and puree again for 4-5 minutes. Adjust taste. Store in airtight container in fridge for up to 2 weeks.
