A great way to get some veggies with your breakfast –– although, this could sub-in for dinner too.
Braise, blister or sautée 5-6 Shishito peppers in EVOO with a generous pinch of salt. Add in a handful of baby spinach leaves, sautée together for about one minute. Using a spatula, shift the peppers and spinach to the sides of your sautée pan forming an open center.
Drop in two eggs and cook sunny-side-up, adding fresh ground pepper and a sprinkle of salt to taste. Perfect!
