Do you ever eat lunch on the fly? The day gets busy, you are hungry, but sometimes you haven’t really planned ahead for what you will eat.
You can easily create this no-fuss, protein-packed meal in just a few minutes. You can even do this at work if you have a fridge with a little planning ahead.
I cut a chunk of crusty Como bread and topped it with a generous layer of lemon hummus. Added a hardboiled egg. Then served a generous spoonful of pre-made protein salad: chickpeas, edamame, quinoa, kale, red cabbage, oil & vinegar dressing. This lunch was so delicious!
Pairs well with a tall glass of ice water or an herbal hot tea.
