Wow, this one goes back to the 2013 Menu for Change potluck party recipe book, the very first one. This recipe was so beautiful it made the cover page! Super easy and tasty, not to mention nutritious too. Perfect for a summer gathering. Thanks to MFC participant JB for the recipe.
Ingredients:
- 4 C (1 quart) strawberries, hulled and halved
- 1 pint plain Greek yogurt
- 1-1/2 tsp turbinado or demerara sugar (optional)
Directions:
Toss strawberries in bowl with sugar. Roast strawberries on a parchment-lined rimmed baking sheet cut-side up in 350 degree oven, about 20 minutes until soft & juicy. Transfer everything to bowl to cool. Divide yogurt into 6 bowls, spoon the cooled strawberries with sauce on top. Can serve warm, room temp or chilled.
Serving Options:
Garnish with toasted slivered almonds + splash of balsamic vinegar. Or, layer in parfait with yogurt, nuts, fresh fruit/berries.
