I can’t believe I am posting yet another chicken sheet pan dinner, and it’s from 2020 no less! It is such an easy meal to fall back on when you don’t know what to make or you don’t have much time or energy to cook. Thanks go to Chez Glenn, of course.

This version has bone-in chicken thighs, sliced potatoes, green onions and broccoli. Baked with EVOO, salt, pepper at 450 F. Plated with a drizzled mixture of melted butter, lemon juice and small capers for a salty kick. Delish!
