Sometimes the best impromptu salads are made by cleaning out the fridge—no recipe, no exact measurements, and no wrong way to make them. They can be a great dinner side, a stand-alone lunch, or even a creative breakfast.
This one pictured has mixed greens, chopped carrots, sliced red radish, green onions, blueberries, and crushed walnuts. The dressing is 3 parts extra virgin olive oil and 1 part white wine vinegar + apple cider vinegar, coarse mustard, salt and pepper—whisked and tossed into salad mixture immediately before eating.
To make this into a robust meal, add one or more of the following:
✅ sliced hard-boiled egg
✅ crumbled goat cheese
✅ roasted chicken
✅ smoked salmon
✅ cubed firm tofu
