On the heels of my recent post, Summer Salad Base, here’s a tasty version of beet salad.
This time I used mixed greens, chopped carrots, chunky slices of red beets, crushed walnuts and goat cheese. Same dressing (click here for ingredients and instructions). I boiled the beets whole until soft, but they’d also be great roasted.
The combinations are endless!
