Why does a pasta dish fit with body image?
When food is delicious and nutritious, you feel better. When you feel more nourished, your mind functions better, which leads to improved mood and body image.
This dish is great for Meatless Mondays or any other day of the week you need a quick, tasty, and nourishing pasta dinner. Bonus: Use fresh veggies and herbs from your garden.
I’ve made this dish a number of times since it first appeared in my book, each time using different ingredients. That’s the beauty of it! Variations on a theme make it easy to change-up.
The recipe for this first one is from page 99 of The Menopause Menu, which is similar to the one in this post from June, 2023.
This second one was made when my fridge was basically devoid of produce except for a lonely bunch of green onions. I gathered cherry tomatoes, basil and chives from my garden, found a can of Great Northern beans in my pantry, added diced green onions, and the last jar of vodka sauce (pic taken before sauce or pasta added). Salt, pepper and red pepper flakes added some zing.
This third one was made with zucchini, kale, shiitake mushrooms, a handful of garden cherry tomatoes, basil, and chicken sausage. No sauce needed—just a splash of EVOO, salt, pepper and red pepper flakes (pic taken before pasta added).
Dinner is served! Leftovers taste great the next day for lunch or another dinner.
